KITCHEN RECIPES







SPARE RIBS CALDERETA  (KALDERETANG BUTO-BUTO)

Actually, Caldereta's name was derived from the Spanish word "caldera" meaning cauldron. The dish is similar to meat stews from the Iberian peninsula and was brought to the Philippines by the Spanish during their 300-year occupation of the Philippines.


Now, Kaldereta can consider as one of the most popular dishes here in the Philippines aside from Adobo and each family has their own version; it was typically served at special occasions, parties, and festivities.



Today, My brother decided to cook this dish cause I don't really know how to, so for the meantime, I am there just to observe and silently taking notes of what he actually did.  

So, here it is the Recipe for this dish 

ALL YOU NEED TO HAVE :


1-kilo Pork Spareribs cut into serving pieces

1 medium carrot cut into cubes

2 medium potatoes cut into cubes

1 large red bell pepper

1 knorr pork cubes 

2 tbsp. peanut butter
 (he didn't use it, we don't like the taste of it  )

5 cloves minced garlic

 1  liver spread or paste

1 can  of dry peas

1 large white onion chopped

salt, pepper, and sugar

chilies (optional)



ALL YOU NEED TO DO :



1. Boil pork ribs in a pot of water until the meat is tender. Remove from the pot but don't discard the water yet, you can use later.

2. In the pan, heat oil over medium heat. Sautè garlic and onions then add back the spare ribs and sautè for at least 2-3 mins.

3. Add tomato sauce and tomato paste, stir until pork is well coated. Add salt and pepper to taste, stir and wait for a minute.

    4. Pour a small amount of spare ribs broth. Set heat to high and cover pot with a lid. Once the liquid starts boiling, set heat to medium-low. Cook it for 45 mins.

5. Add liver paste, potatoes, carrots, sugar. Stir until well combined. Simmer for about 15 minutes over low heat until sauce becomes slightly thick then Add bell pepper.

6.               Taste the sauce and adjust seasoning accordingly and if you like it to have a little bit twist, you can add chilies. Simmer for 1 to 2 minutes then turn off the heat. 
Serve with rice and enjoy!
